Slow Cooker Glazed Carrots

My son invited my husband and me over for a New Years Day feast with his family and friends. Of course I wanted to bring something - but I didn't want to add to the carb load of a traditional meal so I went on the hunt for something different but healthy. This carrot recipe did not disappoint. The cinnamon and nutmeg really made this special without the guilt! Enjoy.
Ingredients
2 lbs carrots peeled and sliced into ½ inch pieces
¼ cup butter, melted
1/3 cup sugar
½ tsp salt
¼ tsp cinnamon
1/8 tsp nutmeg
1/tbsp chopped parsley
Directions
Place carrots in slow cooker. In a small bowl, whisk together the butter, brown sugar, salt, cinnamon and nutmeg.
Pour brown sugar mixture over the carrots and toss to coat.
Cook on high for 3 hours or until carrots are tender. If you would like to thicken the glaze, remove cover and cook on high for an additional 15 minutes. Sprinkle with parsley and serve.
