Gluten Free Blondies

These are so good. Soft, chewy...everything you want in a blondie and if you don't tell, no one would ever know they are gluten free. Of course if you are not a GF person, go ahead and use all purpose flour. It is always nice to have an easy, delicious, go-to recipe when you want to make something on the fly. Enjoy!


Ingredients


1 1/2 cups GF flour blend (I use gf Jules)

1 tsp baking powder

1/2 tsp salt

3/4 cup unsalted butter, melted and cooled slightly

1 1/2 cup light brown sugar, packed

2 large eggs, cold

1 1/2 tsp pure vanilla extract

1 cup semisweet chocolate chips

1 cup white chocolate chips


Directions


Preheat oven to 350 degrees. Line a 9x13 baking pan with parchment paper leaving enough overhang to remove blondies from pan.


Whisk gluten free flour, baking powder and salt together in a small bowl. Set aside.


Add the melted butter and brown sugar to a large bowl and whisk to combine. Whisk in the eggs and vanilla extract until the eggs are completely incorporated. Stir in the dry ingredients and mix until just combined. Fold in the semisweet and white chocolate chips.


Transfer the batter to the prepared pan, spreading evenly throughout the pan. Bake on the center rack for

22-24 minutes or until just done. Don't over bake.


Cool completely on a wire rack before removing from the pan and cutting into bars. Store in an air-tight tin.
