Date Bars

I love dates. Sometimes when I make my Grandmother's date-filled cookies (at Christmas) I have some leftover filling. I hate to waste those yummy dates so I usually make a half batch (8x8 pan) of date bars. This recipe makes a 9x13 pan. So if you love that great date filling and want an easy way to bake with them, this is it. You can thank Betty Crocker for this recipe. Enjoy.
Ingredients
Date filling (below)
¾ cup butter, softened
1 cup brown sugar (packed)
1¾ cups all-purpose flour
1 tsp. salt
½ tsp. baking soda
1½ cup quick-cooking oats
Directions
Prepare date filling; cool. Heat oven to 400 degrees. Grease a 13x9x2” baking pan. Cream butter and sugar. Mix in remaining ingredients. Press half the mixture evenly in bottom of pan. Spread with filling. Top with remaining crumble mixture, pressing lightly.
Bake 25-30 minutes or until light brown. While warm, cut into bars, about 2x1½ inches.
Date Filling
Mix 3 cups cut-up dates (1 pound), ¼ cup sugar and 1½ cups water in saucepan. Cook over low heat, stirring constantly, abut 1 0 minutes or until thickened. Let cool.
Makes about 3 dozen bars
