Very Best Chocolate Cake

I have been making this chocolate cake for over 35 years – it came from a newspaper, probably our local one. The newspaper clipping is yellowed, torn and stained. And I still agree with the title, it is the very best chocolate cake. I always requested a chocolate cake with chocolate frosting for my birthdays when I was little – so did my daughter. Now her oldest daughter does too. This cake has stood the testament of time. I think you will approve. Enjoy.
Ingredients
3 cups flour
2 cups sugar
½ cup cocoa powder
½ tsp. salt
2 TBSP vinegar
2 tsp. vanilla extract
2 tsp. baking soda
1-cup vegetable oil
2 cups water
Directions
In a large mixing bowl, combine all ingredients except frosting. Beat with electric mixer until smooth. Pour into greased 13x9” cake pan. Bake at 375 degrees 35-40 minutes. Cool and frost in pan.
(Yes, this cake contains no eggs and all the ingredients can be mixed at one time).
Chocolate Frosting
Ingredients
¼ cup butter, melted
½ cup cocoa powder
¼ tsp. salt
1/3 cup milk
1½ tsp vanilla
3½ cup powdered sugar
Directions
Combine melted butter, cocoa and salt. Then add milk and vanilla. Mix in sugar in 3 parts. Mix until smooth and creamy. Add more sugar to thicken or milk to thin if needed for spreading consistency.
